On arrival you will be met by your tutor and introduced to the rest of the team. The experienced tutor will provide you with an overview of the dishes that you will be taught on the day before the introduction of the ingredients, herbs and spices that you will be using in the class.
In all of the classes, you will be lead through two to three dishes with one-to-one assistance. Although you will be provided with recipes we encourage you to use your creativity by blending the herbs and spices of your choice for the dishes.
The courses you can choose from are:
Taste of Nigeria – learn to cook popular Nigerian dishes from across the country. A fantastic opportunity to learn to combine authentic ingredients to create delicious Nigerian flavours. This class focuses on using traditional techniques, whilst offering an insight into modern methods. Typical dishes taught in this class are: Nigerian-style jollof rice, Egusi soup with pounded yam, Moi-moi (steamed black-eye bean savoury pudding)
Taste of Morocco – uncover authentic food from across Morocco by exploring the fragrant and exotic flavours of this popular travel destination. This class uses authentic ingredients and spices directly from Marrakech. Discover the secrets to cooking real Moroccan food.
Taste of Ghana – explores the diverse food that can be found across Ghana. Discover Ghanaian variations of West African flavours, and using local ingredients, you can adapt these dishes to suit you and your family. Typical dishes on this course include: Ghanaian-style jollof rice, Kelewele (Ghanaian spicy plantain), Peanut soup and Fufu
West African Vegetarian Dishes - uncover authentic food from across West Africa, including Cameroon, Sierra Leone, Gambia, and Senegal. This class explores delicious tastes and flavours, along with West African cookery methods - to ensure vegetarian dishes are exciting and exotic.
East African Vegetarian Dishes – explore the wonders of vegetarian food from East Africa, including Kenya, Ethiopia, Somalia and Uganda. Typical dishes include: Mbazi wa nazi (Pigeon peas cooked in a Kenyan-style spicy coconut sauce), Matoke (Ugandan green banana stew), Mesir Wat (Ethiopian lentil stew)
Spicing up Seafood – explore the delicious seafood recipes that can be found across Africa; from Ghana, Morocco, Tanzania and Congo. Typical dishes include: Chermoula prawns with pomegranate cous cous, Grilled Tilapia in a West African style peanut sauce, Liboke de poisson (Congolese style fish cooked in banana leaf)
Spicing up Chicken - explore the delicious chicken recipes that can be found across Africa, touching on recipes from Ghana, Morocco, Tanzania and Congo. Typical dishes include: Poulet Yassa (Senegalese style lemon and onion chicken), Kenyan style Kuku (Guinea fowl), Pepper chicken (chicken in a peanut and lime sauces from Sierra Leone)
At the end of the classes you can take home all of the dishes you have created, recipe cards to recreate the dishes at home and the best part - no washing up.
